1. Evacuation
The tray with the product enters the chamber and the vacuum pump draws out the air.

In MAP, the air in the pack is replaced with a gas mixture chosen for the product before sealing. It is common for fresh meat, sliced meats, cheese, ready meals and bakery products packed in trays.

The tray with the product enters the chamber and the vacuum pump draws out the air.
The machine injects the gas or gas mixture. On our tray sealers, N2 or N2+CO2; the NEX-350AZ and the rotary models state a gas replacement rate of 99.5% or more.
The lidding film is heat-sealed onto the tray and cut. The barrier of the film and tray holds the atmosphere for the product’s life.
Not every machine does the same thing. A gas-flush tray sealer such as the NEX-271 sweeps the air out with gas before sealing, without a vacuum pump. A MAP unit such as the NEX-272 first draws a vacuum in the chamber (20 m³/h pump) and then injects the gas, giving better control of residual oxygen.
The gas mixture, the barrier material and the storage temperature are defined for each product. The machine alone does not determine shelf life: it must be validated with your product, your packs and your cold chain.

Discuss your application ↗A packaging method in which the air in the pack is replaced with a gas or gas mixture (for example nitrogen, or nitrogen with CO2) before sealing, to help preserve the product.
Modified Atmosphere Packaging. It is also referred to as protective atmosphere packaging.
Our tray sealer specification sheets list N2 or N2+CO2 as the flushing gas. The exact mixture is set by the food producer with its gas supplier.
Vacuum removes the air and the pack fits tightly around the product. MAP removes the air and replaces it with gas, so the product is not compressed: useful for sliced products, ready meals or delicate foods.
